The best, most beautiful, most expensive knife is of no use to you in the long term if you do not look after it properly. This includes both hand washing and treating the blade and handle with care oil.
However, the edge retention and lasting sharpness will only be maintained if you use a sharpening steel before or after using the blade. This will straighten the cutting edge, which will fold over over time. You will not be able to see the edge folding over with the naked eye. If you don't do this, a blunt knife will eventually make kitchen work more difficult.
The composition of the alloy steel is specified as 1.15 % C content (carbon), 0.6 % chromium and 0.03 % vanadium.
Medium-fineness means that this steel quickly forms a new burr on the knife edge, which enables a smooth cut.
Only then will it be a nice ridge and I say: mountain heil! This model is the classic in the German household.
