In Chinese cuisine, a different knife shape is preferred for the daily preparation of food than in our country. Rectangular cleavers with different back thicknesses are used for chopping vegetables and fruit or fish, otherwise for chopping meat and bones. Anyone who thinks this is cumbersome and impractical is on the wrong track. Because as soon as you get to grips with the appropriate cutting technique, preparing a wok dish, for example, is great fun. However, I don't want to limit the use of the Chinese vegetable cleaver to this. My dog is fed raw, although not cooked with the wok. But his vegetables are chopped into small pieces with this type of cleaver and then maneuvered into his pan on the wide metal surface. This works just as easily for cutting fish or meat. However, if bones need to be chopped, a thicker blade is required. Otherwise there is a risk of the blade breaking. With both models, the hand grips relatively far forward to achieve an agile technique. It is impressive to see how Chinese chefs can perform precision work with such axes. With practice, you can also fold origami from snake cucumbers.
